Just wondering why you don't want to use the forwarding field on the person doc?
The other choice is to change the app to tack on the correct address or point all users mail files to one inbox and have a agent run frequently that would create a doc in the mail.box and replace the to, cc,bcc and recipients with the correct 365 address.
